Ingredients
- 1 package of buckwheat soba noodles
- 1 lb of chicken breasts (cut into 1/2 inch cubes or 1 inch strips)
- 1 carrot cut lengthwise into 1 inch long and about 1/8 wide strips
- 1/4 head of green cabbage shredded
- 1 cup of broccoli florets
- 1 small onion cut in 8 sections and then separated
- 1/4 cup of Japanese style soy sauce
- 2 cloves of garlic, minced
- 1/2 tsp of sesame oil
- 1 tbsp sunflower oil (or any other vegetable oil that is suitable for frying)
- chili paste to taste
Cook soba noodles according to the package directions. Set aside.
In a wok, preheat sunflower oil and sesame oil (chili paste could be added at this step as well). Add garlic and stir fry for about 30 seconds. Add chicken and stir fry for a minute. Add half of the soy sauce and continue to stir fry until chicken is just done. Transfer to a plate and set aside.
Add veggies to the emptied pan (i.e. the onion, cabbage and carrots, and broccoli). Stir fry until cabbage begins to wilt. Add remaining soy sauce and buckwheat noodles. Stir fry for about a minute. Add chicken. Carefully mix everything. Enjoy!
