{"id":2837,"date":"2012-12-21T11:46:52","date_gmt":"2012-12-21T16:46:52","guid":{"rendered":"http:\/\/www.elenamaximova.org\/food\/?p=2837"},"modified":"2012-12-21T11:46:52","modified_gmt":"2012-12-21T16:46:52","slug":"cock-a-leekie-soup","status":"publish","type":"post","link":"https:\/\/www.elenamaximova.org\/food\/2012\/12\/21\/cock-a-leekie-soup\/","title":{"rendered":"Cock-a-leekie Soup"},"content":{"rendered":"<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>2 leeks washed, cleaned and sliced into 1\/2 inch pieces<\/li>\n<li>1.5 &#8211; 2 lbs boneless, skinless chicken thighs<\/li>\n<li>2 &#8211; 3 potatoes, diced<\/li>\n<li>1 yellow onion washed<\/li>\n<li>2 stalks of celery, sliced<\/li>\n<li>1\/2 cup pearl barley (for faster cooking time)<\/li>\n<li>fresh parsley and thyme to taste<\/li>\n<li>salt and black pepper to taste<\/li>\n<\/ul>\n<p>Add about 2 liters (about 8 cups) of cold water to a pot. Place chicken pieces inside and bring to a gentle boil. Skim foam. Add whole onion and barley. Cook for about 20-30 minutes on low or until barley is cooked. Add potatoes. Remove chicken and chop it into 1\/2 inch pieces. Return chicken to the pot. Add leeks, celery, salt and pepper. Simmer until potatoes are tender and add fresh herbs.
