{"id":2316,"date":"2012-07-27T09:08:44","date_gmt":"2012-07-27T13:08:44","guid":{"rendered":"http:\/\/www.elenamaximova.org\/food\/?p=2316"},"modified":"2012-07-27T09:08:44","modified_gmt":"2012-07-27T13:08:44","slug":"guyanese-coconut-buns","status":"publish","type":"post","link":"https:\/\/www.elenamaximova.org\/food\/2012\/07\/27\/guyanese-coconut-buns\/","title":{"rendered":"Guyanese Coconut Buns"},"content":{"rendered":"<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>2 cups all-purpose flour<\/li>\n<li>2\/3 cup white sugar<\/li>\n<li>1 cup butter, cut into small pieces<\/li>\n<li>1 teaspoon baking powder<\/li>\n<li>1\/2 teaspoon salt<\/li>\n<li>2 eggs<\/li>\n<li>1\/2 cup milk<\/li>\n<li>1 teaspoon vanilla extract<\/li>\n<li>1\/2 teaspoon almond extract<\/li>\n<li>3\/4 cup flaked coconut<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<p>Preheat the oven to 350F (about 175C). In a large bowl, stir together dry ingredients: flour, sugar, baking powder, and salt. Add butter, and cut in using a pastry blender or by hand until the mixture resembles fine crumbs. In a separate bowl, whisk together the eggs, milk, vanilla extract, and almond extract. Make a well in the center of the dry ingredients, and pour in the wet ingredients. Add coconut, and mix just enough to blend (do not overmix). Form 2 inch balls and place them onto ungreased cookie sheets.
