During the dinner my son Matthew said, “This is like eating at IKEA!” He meant it as a compliment, so I wasn’t offended. Well, maybe just a bit. I made smoked salmon roulade, meatballs with mashed potatoes, and almond cake. Sounds just like IKEA’s menu 🙁 . Alex saved the day by adding that everything tasted better than at IKEA. I love my husband but he should have done better than that.

I was excited about the idea of making a smoked salmon roulade because smoked fish is one of the traditional Russian appetizers but I’d never tried this recipe before. It is pretty easy to make and can be very presentable (mine wasn’t as presentable as it should have been). I would make some corrections to the recipe such as cut the amount of horseradish sauce (it was a little too sour to my taste). |

Meatballs were the hit with me and my guys. The meat was tender and flavorful and the sauce was creamy and delicious. I can see myself making these on a regular basis since they are so easy to make and love.Ingredients for the meatballs
Ingredients for the sauce
Step 1. Prepare Meatballs. Preheat oven to 400 F. Pour milk in a medium bowl and add breadcrumbs. Mix and set aside until breadcrumbs are soft. In a blender or food processor combine an onion, an egg and spices. Combine breadcrumbs, spice mixture and ground meat and mix well. Create meatballs (about 1 inch in diameter) and arrange them in a greased baking sheet (make sure it has raised edges so the juices won’t run over. Bake for about 15-18 minutes. Step 2. Prepare Sauce. Add butter to a skillet and set to low-medium heat. Let butter to melt and add onions. Sauté onions for about 2 minutes or untill translucent. Add flour and mix. Continue to cook until the flour mixture become has lightly browned. Gradually add beef broth mixing constantly to incorporate and avoid lumps. Continue to cook until slightly thickened and add cream and spices. Add meatballs and heat (do not boil). |

This is one tasty cake! And flourless! When I tasted it I immediately knew that I should leave any hopes for having the leftovers to stay till the next day. I suspected that my husband would wait for me to fall asleep so he could have the rest of the cake for himself. And I was right, of course. 🙂 Well, I love my husband even though he ate the cake. |
