Nigeria

For the Nigerian cuisine I prepared only two dishes Jollof Chicken and Rice and Shuku Shuku (coconut cookies). Both dishes turned out pretty good but Alex definitely preferred cookies (no surprise here).

Jollof Chicken and Rice
The recipe for the dish is good if you use dark meat pieces of chicken. I would not recommend using chicken breast because it easily becomes overcooked.

Shuku Shuku — Nigerian Coconut Cookies
These cookies were a big hit with my husband and they are easy to make, so I’m going to save this recipe for the future.

Ingredients

  • 1 cup unsweetened coconut flakes
  • 1/4 cup of powder sugar
  • 3 extra large egg yolks (or 4 medium large ones)
  • 1/4 cup self-raising flour for coating
  • 1/2 tsp of almond or vanilla extract (optional)

Preheat the oven to 350 degrees F. In a medium bowl, mix together the coconut, sugar and egg yolks (you can add a dash of flavoring here, such as almond or vanilla extract). Form 1 inch balls, and roll each ball in flour to coat. Place on a baking sheet. Bake for 15-20 minutes in the preheated oven, or until golden (be careful not to overbake).
