Guyanese Shrimp Curry

Ingredients

1 lb raw shrimps
1 onion chopped
3 cloves garlic minced
2 bay leaves
2 tsp of roasted ground cumin and coriander
2 tsp turmeric
1 tbsp curry powder
2 tbsp of grated coconut
1 can of coconut milk
1/2 cup cilantro
salt and pepper to taste

Directions

Marinate shrimp in lime juice and 1/2 tbsp curry powder. Heat the oil in a skillet and fry the onions and garlic along with bay leaves until onions become translucent but not brown. Add the turmeric, curry powder and the mix of cumin and coriander and fry for a minute, then add 1/2 cup of water or coconut milk to keep from burning. Add shrimp and grated coconut, salt and pepper. Fry for a few more minutes. Add coconut milk, stir and cover the pot. Boil on medium heat until shrimp is cooked, about 5 minutes. Serve hot over rice.
