Since the republic of San Marino is surrounded by Italy, its cuisine is basically Italian. Internet sources suggested a couple of San Marino specialties and I decided to go along with them.

| What can I say? Nidi di Roundine rock! I would make them every week if they were not so rich and packed with calories. The original recipe has more steps and is a bit complicated (plus it is in Italian). I translated the recipe with Google translator and created a simplified version.

This cake is referred to as the typical cake of San Marino. Well, I decided to recreate it as best I could. I bought wafer sheets from a Russian store and used Trader Joe’s Cocoa Almond Butter as the filling cream. My husband and kids were very pleased with the result.
