Colombian Cuisine

I think that the Colombian food night went fairly well. Eugene tried almost every dish and the rest of us weren’t just trying but eating at a good speed which I consider a positive sign of a successful meal.

Ajiaco – Colombian Chicken Soup
This is the first soup dish I made for this project. The soup itself resembles our traditional chicken soup but the Colombian version also includes aji (hot sauce) and additional garnishes. As a result you get a versatile dish that can be eaten as is or with additions that suit your taste.

Rabbit Stew with Coconut Cream
Even though both Alex and Matthew said that they liked this rabbit recipe I doubt that they told me the truth. There were some leftovers and that is the sign that something wasn’t right with it. Oh well, I love my husband and kids for their considered behavior!

These potatoes are delicious! Plus, the recipe is simple enough, so I’ll probably make them again soon.

Torta De Coco – Coconut Cake
I wasn’t impressed with the recipe. I think it turned out to be too sweet and hard coconut pieces inside the cake added some unwelcoming texture (like eating sand or something). Definitely not going to make this again.
