This flourless cake is traditional accross Scandinavian countries. It is fast and easy to make.
Ingredients for the dough
- 5 egg whites
- 2 cups of almonds, grinded in a food processor (I also add about 1/4 cup of grinded peanuts)
- 1 tsp of baking powder
- 2/3 cup of confectioner sugar
Ingredients for the frosting
- 5 egg yolks
- 2/3 cup of sugar
- 1/2 cup of cream
- 1/2 cup of butter
- 1/4 tsp of almond extract
Step 1. Prepare Frosting.On the low to medium heat, in a sauce pan combine egg youlks with sugar. Heat the mixture until sugar disolve completely. Add cream and almond extract and continue heating (mixing constantly) until the mixture become very thick. Incorporate butter, cool comepletely and refregirate for at least 8 hours.
Step 2. Prepare Cake.Preheat oven to 400 F. Combine nuts, sugar, and baking powder. Set aside. In a large bowl beat egg whites until they form stif picks (don’t use plastic bowl because it may retain some fat and that could ruin your whites). Very carefully fold in almond mixture until well combined. Transfer to a greesed spring form and bake for about 18 – 20 minutes or until the top of the cake is set and sligtly springs back if toched. Let the cake to cool completely before frosting it.
