Shopska Salad

I prepared this salad for the Macedonian food week. However, when I tasted this it, I realized that I already had it many times. Even when I was a little kid in Odessa, Ukraine, this was an everyday summer seasonal salad that had no special name. It is easy to make and has a great refreshing taste no matter how many times you have made it before.

INGREDIENTS

3 tomatoes
3 small cucumbers
1/2 sweet onion
1/3 cup of feta cheese
1 tbsp sunflower oil (can be substituted with olive oil)
1 tbsp of white wine vinegar
some parsley for garnish
salt to taste

Slice tomatoes, cucumbers, and onion. Combine everything. Add oil, vinegar, and salt. Carefully mix the salad. Transfer to a serving bowl and garnish with crumbled feta and parsley. Enjoy.
